Ingredients:
  • 100 g quality dark chocolate (70%)
  • 100 g unsalted butter
  • 100 g rye bread
  • 2 large eggs
  • 50 g golden caster sugar
Instructions:
  • - Preheat the oven to 200ºC/400ºF/gas 6. Line two trays with greaseproof paper and lightly coat them with olive oil. - Melt the chocolate with butter in a heatproof bowl over simmering water. - In a food processor, blend bread into fine crumbs. Add eggs and sugar, then blend well. - While the processor is running, pour in the melted chocolate mixture and blend until combined. - Transfer the cookie mix into a sandwich bag, cut off a corner, and pipe 3-4cm blobs to form 24 cookies on the trays. - Bake for 8 to 10 minutes until the cookies spread and set. - Sprinkle with sea salt, cool slightly, and enjoy.
