Indulgent caramel popcorn with stout beer, roasted almonds, and milk chocolate chunks - perfect for the holidays!
Ingredients:
  • 8 cups popped popcorn
  • 1 cup roasted salted almonds
  • 1/2 cup stout beer
  • 1/4 cup brown rice syrup or corn syrup
  • 3 tablespoons butter
  • 1/4 teaspoon salt
  • 1 cup chopped premium milk chocolate (6 oz)
Instructions:
  • Preheat your oven to 300°F. Cover two 15x10x1-inch pans with foil and give them a quick spray of cooking oil.
  • Place the popcorn and almonds in a large bowl, ready for the next step.
  • In a 2-quart saucepan, simmer beer on medium heat, stirring often, until it reduces to 1/4 cup, for approximately 6 minutes. Validate the measurement by pouring into a glass measuring cup. Return to saucepan, mix in brown sugar, syrup, and butter. Cook on medium heat until edges bubble, stirring occasionally.
  • Lower the heat to medium-low and continue to cook for about 5 more minutes, stirring occasionally, until the mixture thickens and becomes syrupy. Remove from heat and gently incorporate the salt. Pour the sauce over the popcorn in the bowl and mix until everything is evenly coated. Spread the popcorn mixture onto pans.
  • Bake for 20 minutes, stirring every 5 minutes until mixture is caramelized. Let cool for about 1 hour. Break into pieces and mix in chocolate. Store in an airtight container.
