Indulgent chocolate stout cake with caramel frosting and beer nuts.
Ingredients:
  • 1 bottle (12 oz) stout or dark beer
  • 4 oz unsweetened baking chocolate, chopped
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup sour cream
  • 1/4 cup butter, softened
  • 1 1/4 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1/4 cup butter
  • 1/2 cup packed brown sugar
  • 3 tablespoons reserved beer
  • 1 cup powdered sugar
  • 1/4 cup beer nuts, chopped
Instructions:
  • - Preheat oven to 350°F. Grease a 10-inch angel food (tube) cake pan with shortening and lightly flour it. Measure out 3 tablespoons of beer into a small bowl and set aside. In a 1-quart saucepan, gently heat the rest of the beer and chocolate over low heat, stirring occasionally, until the chocolate is melted. Pour the mixture into a large bowl and let it cool to lukewarm for about 20 minutes.
  • Combine the rest of the cake ingredients with the beer mixture. Mix using an electric mixer on low for 30 seconds, making sure to scrape the bowl occasionally. Then, beat on high speed for 3 minutes, remembering to scrape the bowl. Spread the batter in the pan.
  • Bake for 60 to 70 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 20 minutes, then remove from the pan onto a cooling rack. Cool entirely for about 1 hour.
  • In a 2-quart saucepan over medium heat, melt 1/4 cup of butter. Stir in brown sugar and heat until boiling while stirring constantly. Reduce heat to low and boil while stirring for 2 minutes. Add 2 tablespoons of beer, bring to a boil, then remove from heat. Allow to cool to lukewarm for about 20 minutes. Stir in powdered sugar and gradually mix in additional beer, 1 teaspoon at a time, until smooth and spreadable. Drizzle over cake, letting some cascade down the sides. Garnish with beer nuts.
