Chocolate Stout Sandwich Cookies

Decadent sandwich cookies infused with rich stout beer and chocolate, made with Betty Crocker™ Super Moist™ cake mix - a delicious treat.
Ingredients:
  • 1 3/4 cups from 1 box Betty Crocker™ Super Moist™ Chocolate Fudge Cake Mix
  • 1/4 cup stout beer
  • 2 tablespoons vegetable oil
  • 1 cup bittersweet chocolate chips
  • 1/3 cup whipping cream
  • 2 tablespoons stout beer
Instructions:
  • Preheat oven to 350°F and prepare a cookie sheet with parchment paper or a light coating of cooking spray.
  • In a large bowl, use an electric mixer to beat cookie ingredients on low speed for 30 seconds and then on medium speed for 1 minute. Drop batter by 2 teaspoonfuls onto a cookie sheet, spacing them 2 inches apart.
  • Bake for 10 to 12 minutes until firm. Let cool for 2 minutes, then transfer to a cooling rack to cool completely.
  • Microwave the filling ingredients in a small microwavable bowl on High for 1 to 2 minutes, stirring every 30 seconds, until they are melted and smooth. Let it cool in the refrigerator for 45 minutes without stirring until it thickens and becomes spreadable.
  • Spread a generous 1 to 2 tablespoons of filling on the bottom of one cookie. Sandwich another cookie on top, bottom side down, and gently press together.
