Elevate classic chocolate zucchini cake with a decadent cream cheese swirl for irresistible appeal.
Ingredients:
  • 3 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 3 cups white sugar
  • 1.5 cups canola oil
  • 3 eggs
  • 3 cups grated zucchini
  • 1 cup buttermilk
  • 1 (8 ounce) package cream cheese, softened
  • 0.25 cup white sugar
  • 1 egg
  • 0.5 cup milk chocolate chips
  • 0.5 cup semisweet chocolate chips
Instructions:
  • Preheat your oven and generously grease a sheet cake pan. Combine and sift flour, cocoa powder, baking soda, and salt in a mixing bowl.
  • In a mixing bowl, using an electric mixer on low speed, combine 3 cups of sugar and canola oil until smooth. Add eggs one at a time and mix well. Stir in zucchini and vanilla. Gradually add the flour mixture in four parts, alternating with 1/4 cup of buttermilk after each addition. Mix on medium-high speed for 1 minute. Pour the batter into the prepared baking pan.
  • Combine cream cheese and 1/4 cup of sugar until smooth, then mix in 1 egg. Drop spoonfuls of cream cheese onto batter and swirl with a knife for a marbled effect. Top with milk chocolate and semisweet chocolate chips.
  • Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the chocolate center comes out with moist crumbs. Cool on a rack.
