Decadent chocolate swirl cheesecake that's simply irresistible.
Ingredients:
  • 250g pkt choc ripple biscuits
  • 100g butter, melted
  • 500g cream cheese
  • 300g Light Sour Cream
  • 175g caster sugar
  • 3 eggs
  • 100g dark chocolate, melted
Instructions:
  • Preheat oven to 160°C. Crush a 250g packet of Arnott's choc ripple biscuits until they form fine crumbs. Mix in melted butter until well combined. Press the crumbs into the base and two-thirds up the sides of a 22cm springform pan. Chill in the refrigerator.
  • Blend 500g cream cheese, 300g sour cream, and 3/4 cup (175g) caster sugar until smooth. Mix in 3 eggs. Scoop 1 1/3 cups of the mixture into a separate bowl and stir in 100g melted dark chocolate.
  • 1. Pour half of the plain mixture into the base, followed by half of the chocolate mixture. Repeat the process. Use a knife to swirl the mixtures together. Place the tray in the oven and bake for 1 hour. Let it cool slightly in the oven before transferring to the refrigerator.
