Chocolate tofu mousse

Add this simple and delightful dessert to your Christmas feast for the whole family!
Ingredients:
  • 2 x 300g packets silken tofu (at room temperature)
  • 27.00 gm pure maple syrup
  • 4.40 gm vanilla extract
  • 3 x 200g blocks dark chocolate, chopped
Instructions:
  • Puree tofu until perfectly creamy, then place in a bowl and gently fold in maple syrup and vanilla extract.
  • Melt the chocolate in a heatproof bowl set over simmering water, making sure the water does not touch the bowl. Stir until smooth, then remove from heat.
  • Mix the chocolate into the tofu mixture gently until fully combined. Divide the mixture evenly into 8 small glasses. Chill in the refrigerator for 2 hours or until firm. Serve and enjoy!
