Indulge in a decadent twist on traditional tres leches cake with rich chocolate milk, cake mix, and luscious chocolate whipped cream.
Ingredients:
  • 1 (18.25 ounce) package Swiss chocolate cake mix (such as Duncan Hines®)
  • 1.25 cups chocolate milk
  • 0.5 cup canola oil
  • 3 eggs
  • 1 teaspoon instant espresso powder
  • 1 (14 ounce) can sweetened condensed milk
  • 0.75 cup half-and-half
  • 0.75 cup evaporated milk
  • 3 tablespoons unsweetened cocoa powder
  • 1 cup confectioners' sugar
  • 0.5 cup unsweetened cocoa powder
  • 3 cups heavy whipping cream
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 9x13-inch pan by greasing and flouring it.
  • In a large bowl, combine cake mix, chocolate milk, canola oil, eggs, and espresso powder. Use an electric hand mixer on low speed until dry ingredients are moistened. Increase speed to medium and beat for an additional 2 minutes. Pour the batter into the prepared pan.
  • Once the toothpick inserted into the center comes out clean after about 35 minutes in the preheated oven, remove the cake and let it cool in the pan until it's no longer hot to the touch. While the cake is still warm, use a small skewer or fork to poke lots of holes all over it.
  • Combine sweetened condensed milk, half-and-half, evaporated milk, and 3 tablespoons of cocoa powder in a bowl and whisk until the cocoa is fully mixed into the liquid. Gently pour the milk mixture over the cake, ensuring even coverage. Let the cake cool until the liquid is fully absorbed.
  • Combine confectioners' sugar and cocoa powder in a bowl, sifting to blend evenly.
  • In a stand mixer, whip heavy cream on medium speed for about 1 minute. Gradually add sugar-and-cocoa mixture in two batches, ensuring each batch is fully mixed before adding the next. Increase speed to medium-high and beat until soft peaks form, creating a thick and spreadable chocolate whipped cream. Spread it on the cake right before serving.
