Chocolate truffle Easter eggs

Make irresistible chocolate eggs, perfect for Easter treats or gifts.
Ingredients:
  • 2 x 180g pkts white chocolate, coarsely chopped
  • 2 x 200g pkts milk chocolate, coarsely chopped
  • 125ml thickened cream
Instructions:
  • Melt half the white chocolate in a heatproof bowl set over simmering water. Stir with a metal spoon until smooth. Set aside 2 tablespoons of melted chocolate.
  • Brush a thin layer of melted chocolate over 22 Easter-egg moulds using a small clean brush. Allow them to set. Repeat the process with half of the milk chocolate.
  • In a heatproof bowl, melt the remaining white chocolate with half of the cream over a saucepan filled with simmering water. Stir until smooth, then remove from heat, cover with plastic wrap, and chill in the fridge for about 1 hour until the ganache thickens. Repeat the process with the remaining milk chocolate and cream. Stir occasionally while chilling.
  • Fill the chocolate egg shells with alternating layers of white and milk chocolate ganache, ensuring a smooth surface. Refrigerate for 15 minutes to set.
  • Place eggs on a clean work surface. Melt reserved white chocolate. Brush edge of a white-chocolate egg shell with melted chocolate, then sandwich with another shell to make a whole egg. Let it set. Repeat with remaining melted white chocolate and white-chocolate egg shells.
  • Melt the remaining milk chocolate and use it to coat the milk chocolate egg shells.
