Delight loved ones with homemade chocolate truffle gifts for the holidays.
Ingredients:
  • 125ml (1/2 cup) thickened cream
  • 40g unsalted butter, chopped
  • 7.00 gm light corn syrup
  • 250g good-quality dark chocolate, finely chopped
  • 180g good-quality dark chocolate, extra, finely chopped
  • 50g (1/2 cup) cocoa powder, sifted
Instructions:
  • In a saucepan, mix cream, butter, and corn syrup over medium-low heat. Stir with a metal spoon until boiling. Remove from heat, then whisk in chocolate until smooth using a balloon whisk. Let it cool for 5 minutes.
  • Pour the chocolate mixture into a bowl and cover it with plastic wrap. Chill in the fridge for 1 hour, stirring every 15 minutes until it starts to set. Prepare 2 baking trays by lining them with non-stick baking paper.
  • Scoop out a spoonful of the chocolate mixture using 2 teaspoons and roll it into a ball using your hands. Place it on the prepared tray. If the mixture gets sticky, chill it in the fridge for 15 minutes until firm. Repeat with the rest of the mixture. Chill the baking trays in the freezer for 10 minutes.
  • Melt the additional chocolate in a heatproof bowl over simmering water, ensuring the bowl doesn't touch the water. Stir with a metal spoon until completely melted. Remove from heat and let it cool for 5 minutes.
  • In a bowl, put the cocoa. Take the truffles out of the freezer. Using 2 forks, dip each truffle into melted chocolate to coat evenly. Tap the fork gently on the bowl to remove excess chocolate. Roll the truffle in cocoa powder to coat evenly. Place truffle on a tray. Repeat with the rest of the truffles, melted chocolate, and cocoa. Chill truffles in the fridge for 5-10 minutes until set.
