Chocolate-Almond Cheesecake Bites

Decadent cheesecake bites enveloped in silky chocolate coating.
Ingredients:
  • 16 thin chocolate wafer cookies (from 9-oz package), crushed (1 cup)
  • 1/4 cup butter or margarine, melted
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup sugar
  • 1 egg
  • 1/4 teaspoon almond extract
  • 2 1/3 cups semisweet chocolate chips
  • 3 tablespoons shortening
  • 2 oz vanilla-flavored candy coating (almond bark), chopped
  • 1 teaspoon vegetable oil
Instructions:
  • Preheat oven to 300°F. Cut a 14x12-inch sheet of heavy-duty foil and line an 8-inch square pan with foil, allowing it to extend over the sides of the pan. Spray the foil with cooking spray. Combine cookie crumbs and butter in a small bowl. Press the mixture into the bottom of the pan.
  • In a large bowl, use an electric mixer to beat together cream cheese, sour cream, and sugar until fluffy. Mix in egg and almond extract, and pour over crust.
  • Bake for 30 to 40 minutes until edges are firm but the center remains soft (it will set while cooling). Allow to cool on a rack for 1 hour, then refrigerate for another hour. In the meantime, line 2 cookie sheets with waxed paper.
  • Lift the cheesecake out of the pan using the foil. Cut it into 48 oblong cheesecake bites by making 8 rows by 6 rows. In a 1-quart microwave-safe bowl, microwave the chocolate chips and shortening uncovered on Medium (50%) power for 3 minutes. Stir well; continue microwaving in 15-second intervals, stirring after each, until the mixture is melted and smooth.
  • Take half of the bites (24 bites) and leave the other half in the refrigerator for later use. Using a fork, dip one bite into the chocolate to coat it. Let any extra chocolate drip off the fork before placing the coated bite on a cookie sheet lined with waxed paper. Repeat the same process with the second half of the bites on another lined cookie sheet.
  • Place candy coating and oil in a small microwave-safe bowl. Microwave on High for 1 minute. Stir well and continue to microwave in 15-second intervals, stirring after each, until completely melted. Transfer the melted mixture into a small resealable plastic bag. Seal the bag and snip a tiny hole in one corner. Drizzle the melted coating over the dipped bites. Keep the bites covered in the refrigerator until ready to serve.
