Chocolate-Caramel Turtle Cookies

Indulge in decadent chocolate-caramel turtle cookies using Gold Medal® flour.
Ingredients:
  • 2 1/2 cups pecan halves
  • 1/2 cup water
  • 1/2 cup sugar
  • 3/4 cup butter or margarine, softened
  • 1 teaspoon vanilla
  • 1/4 cup unsweetened baking cocoa
  • 48 round milk chocolate-covered chewy caramels (from 13-oz bag), unwrapped
Instructions:
  • Preheat the oven to 375°F (or 350°F for dark or nonstick sheets). Place pecans in a medium bowl, soak in water while preparing the dough, then drain thoroughly.
  • In a medium bowl, use an electric mixer to blend sugar, butter, vanilla, and egg until creamy. Gradually mix in flour and cocoa on low speed until dough comes together.
  • Lay out 5 pecans on ungreased cookie sheets to resemble turtle heads and legs. Form rounded teaspoonfuls of dough into 1-inch balls and place one on top of each pecan group, gently pressing down with your palm.
  • Bake for 7 to 10 minutes until cookies are set. While they are still hot, place 1 caramel on top of each cookie, let sit for 5 minutes to soften the caramel, gently flatten with a small spatula, then transfer the cookies to cooling racks.
