Chocolate-Cherry Cheesecake

Impress with an easy, stunning dessert that requires minimal hands-on time.
Ingredients:
  • 2 cups chocolate cookie crumbs
  • 3 tablespoons butter, melted
  • 4 packages (8 oz each) cream cheese, softened
  • 3 eggs
  • 3/4 cup sugar
  • 1/2 teaspoon almond extract
  • 1/2 cup whipping cream
  • 1 can (21 oz) cherry pie filling
  • 1 cup semisweet chocolate chips (6 oz)
Instructions:
  • Preheat the oven to 325°F. Mix crust ingredients in a medium bowl until well combined. Press the mixture into the bottom and 1 inch up the sides of an ungreased 10-inch springform pan.
  • In a large bowl, use an electric mixer to whip the cream cheese until smooth. Add eggs one at a time, making sure to mix well after each addition. Incorporate sugar and almond extract until the mixture is smooth. Finally, add the whipping cream and blend until creamy.
  • Spread 3 1/2 cups of the decadent cream cheese mixture onto the crust, ensuring it is evenly spread. Delicately layer 1 cup of the delightful pie filling over the cream cheese layer (saving the rest for later). Top it off by evenly spooning the remaining cream cheese mixture over the pie filling.
  • Bake for 1 hour 5 minutes to 1 hour 15 minutes until the center is set. Allow to cool in the pan on a wire rack for 1 hour.
  • In a 1-quart saucepan, bring 1/2 cup of whipping cream to a boil over medium-high heat. Remove from heat and stir in chocolate chips until melted.
  • Prepare your serving platter by lining it with waxed paper. Carefully remove the side of the pan and transfer the cheesecake onto the lined platter. Gently spread the glaze over the cooled cheesecake, letting some drizzle down the sides. Chill the cheesecake in the refrigerator for at least 3 hours or overnight. When ready to serve, top with the remaining pie filling.
