Instant Pot Chocolate Cherry Cheesecake

Instant Pot chocolate cherry cheesecake with extra creaminess from Greek yogurt.
Ingredients:
  • 6 ounces chocolate cookie crumbs
  • cooking spray
  • 2 tablespoons melted butter
  • 2 (8 ounce) packages cream cheese, at room temperature
  • 0.66666668653488 cup white sugar
  • 0.5 cup vanilla and honey Greek yogurt, at room temperature
  • 2 tablespoons cornstarch
  • 1 tablespoon black onyx cocoa powder (from Savory Spice Shop®)
  • 0.25 cup miniature semisweet chocolate chips
  • 0.5 cup morello cherries, sliced in half and drained
Instructions:
  • Preheat the oven to 325°F (165°C) for optimal cooking temperature.
  • Blend chocolate wafers to fine crumbs. Grease the bottom of a cheesecake pan. Spread crumbs in the pan, pour melted butter on top, and gently press into a crust on the bottom and slightly up the sides.
  • Place the crust in the preheated oven and bake until it turns a beautiful light golden brown, approximately 8 minutes. Once done, take it out of the oven and allow it to cool entirely.
  • In a bowl, blend cream cheese, eggs, sugar, yogurt, cornstarch, and cocoa powder until smooth using an electric blender. Gently fold in mini chocolate chips.
  • Spread a generous layer of the cheesecake filling over the cooled crust. Scatter a handful of sliced morello cherries on top. Repeat the layers until all the cherries and filling are used up.
  • In a multi-functional pressure cooker (like Instant Pot), pour in 1/2 cup of water. Place an elevated rack inside and set the cheesecake pan on top. Secure the lid, select high pressure, and set the timer for 31 minutes following the manufacturer's guidelines. Let the pressure naturally build for 10 to 15 minutes before proceeding.
  • Follow manufacturer's instructions to naturally release pressure for approximately 12 minutes. Unlock and carefully remove the lid. Allow the cheesecake to cool, then cover and refrigerate for 8 hours to overnight before serving.
