Create romantic Instant Pot heart-shaped chocolate coffee cheesecakes for two this Valentine's Day.
Ingredients:
  • 0.33333334326744 cup crushed chocolate sandwich cookies (such as Oreo®)
  • 4 teaspoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 0.33333334326744 cup white sugar
  • 1 large egg
  • 0.25 cup hot strongly brewed coffee
  • 0.25 cup bittersweet chocolate chips (such as Ghirardelli® 60%)
  • 2 teaspoons heavy cream
  • 1 teaspoon vanilla extract
  • 0.125 teaspoon salt
Instructions:
  • Line the exterior of 3 (4-inch) heart-shaped springform pans with aluminum foil.
  • In a small bowl, mix cookie crumbs with melted butter, ensuring an even coating. Press the mixture firmly onto the bottom of the prepared pans.
  • In a medium bowl, use a fork to cream the cream cheese until smooth. Gradually mix in the sugar until well blended. Add the egg and mix thoroughly.
  • Combine hot coffee with chocolate chips until melted and smooth. Incorporate into cream cheese mixture and blend thoroughly. Fold in heavy cream, vanilla, and salt until mixture is smooth. Transfer batter into the prepared pans.
  • - In a multi-functional pressure cooker, pour in 1 cup of water. - Insert a steamer rack and place 2 batter-filled pans on the rack. - Add another steamer rack on top and place the remaining batter-filled pan. - Close and lock the lid securely. - Set to high pressure for 6 minutes following the manufacturer's instructions. - Allow pressure to build for 10 to 15 minutes.
  • Allow the pressure to release naturally for 10 to 40 minutes as per the manufacturer's guidelines.
  • Allow the pans to cool at room temperature, then refrigerate for 8 hours to overnight. Remove the cheesecakes from the springform pans and add desired toppings before serving.
