Elevate a traditional Italian dessert with this indulgent twist.
Ingredients:
  • 250.00 gm boiling water
  • 20.00 ml instant espresso coffee powder
  • 3 egg yolks
  • 107.50 gm caster sugar
  • 4.40 gm vanilla extract
  • 300ml double thick cream
  • 240.00 gm double thick vanilla custard
  • 10 sponge finger biscuits
  • 310g packet chocolate-chip cookies, chopped
  • Grated milk chocolate, to serve
Instructions:
  • Mix hot water and coffee powder in a heatproof bowl.
  • In a mixing bowl, blend egg yolk, sugar, and vanilla with an electric mixer until thick and creamy. Pour in cream and beat for 2 minutes until soft peaks form. Gently fold in custard.
  • Individually dip sponge finger biscuits in the coffee mixture. Place them in a 7cm-deep, 8 cup-capacity dish, adjusting their size if needed. Spread one-third of the custard mixture over the biscuits. Add a layer of chocolate chip cookies followed by the remaining custard mixture. Cover and refrigerate overnight. When serving, sprinkle with grated chocolate.
