Irresistible banana chocolate chip muffins with a hint of vanilla.
Ingredients:
  • 1.5 cups mashed bananas
  • 0.66 cup sunflower seed oil
  • 1 large egg, beaten
  • 1.5 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and lightly grease a 12-cup muffin tin.
  • Combine ripe banana, rich oil, a fresh egg, and fragrant vanilla in a medium bowl.
  • In a large bowl, mix together flour, sugar, cocoa, baking powder, and salt. Gently stir in the banana mixture until just combined. Fold in the chocolate chips. Divide the batter evenly into the muffin tin, filling each cup 3/4 full.
  • Place the muffins in the preheated oven and bake for 15 to 20 minutes. Once done, transfer the muffins to a wire rack to cool down completely.
