Chocolate Chip Banana Nut Muffins

Irresistibly moist banana nut chocolate chip muffins.
Ingredients:
  • 1 tablespoon butter for greasing, or as needed
  • 0.75 cup white sugar
  • 0.25 cup vegetable oil
  • 0.25 cup mayonnaise
  • 2 eggs
  • 3 bananas, mashed
  • 1.25 cups all-purpose flour
  • 0.5 cup quick cooking oats
  • 0.25 cup ground flax
  • 0.25 cup wheat germ
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 0.75 cup miniature semisweet chocolate chips
  • 0.75 cup walnuts, chopped
Instructions:
  • Preheat the oven to a toasty 325 degrees Fahrenheit (165 degrees Celsius) and prepare 12 muffin cups by greasing them with butter or lining them with paper muffin liners.
  • Combine sugar, oil, mayonnaise, and eggs until creamy and pale yellow. Gently fold in bananas until well mixed.
  • Combine the flour, oats, flax, wheat germ, baking soda, baking powder, and salt into the banana mixture until it is smooth. Add in the chocolate chips and walnuts. Finally, spoon the batter into the prepared pans.
  • Bake in the preheated oven for approximately 25 minutes until the tops are golden and spring back when lightly pressed.
