Banana and choc chip cake

Decadent banana cake with chocolate chips and creamy cream cheese frosting.
Ingredients:
  • 125g butter
  • 60g caster sugar
  • 2 eggs, lightly beaten
  • 190g self-raising flour
  • 2.50 gm bicarbonate of soda
  • 41.20 gm milk
  • 200g banana
  • 50g pecan
  • 95g choc bits
  • 125g cream cheese, at room temperature
  • 45g icing sugar
  • 21.00 gm fresh lemon juice
  • Lemon zest, to decorate
Instructions:
  • Preheat your oven to 180°C and generously brush a 23cm square cake pan with luscious melted butter.
  • Beat butter and sugar with an electric beater until pale and creamy, then mix in the eggs.
  • Pour the mixture into a spacious bowl. Gently mix in the flour and bicarbonate of soda along with the milk using a metal spoon, alternating between the two. Fold in the banana, pecans, and chocolate bits until evenly mixed. Transfer the batter into the pan and bake for 40-50 minutes until a skewer inserted into the center comes out clean. Let it cool in the pan for 10 minutes, then move to a wire rack to cool completely.
  • Once the cake has cooled, use an electric beater to whip together the cream cheese, icing sugar, and lemon juice until light and smooth. Spread the mixture over the cake and garnish with lemon zest for a finishing touch.
