Turn overripe bananas into deliciously moist and flavorful banana muffins.
Ingredients:
  • 1 cup mashed very ripe bananas (2 medium)
  • 1/2 cup packed brown sugar
  • 1/3 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 1/2 cups Gold Medal™ white whole wheat flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup miniature semisweet chocolate chips
  • 2 tablespoons granulated sugar
Instructions:
  • Preheat oven to 400°F and prepare 12 regular-size muffin cups by greasing only the bottoms with shortening or cooking spray, or line them with paper baking cups.
  • Combine ripe bananas, rich brown sugar, creamy milk, fruity oil, and a fresh egg in a spacious bowl. Use an electric mixer or a trusty spoon to blend the ingredients until smooth. Gently mix in flour, baking powder, and salt until just combined. Carefully fold in tiny chocolate chips to enhance the batter.
  • Evenly distribute the batter among the muffin cups, then sprinkle each with a touch of sugar. Bake for 13 to 18 minutes or until a toothpick inserted in the center comes out clean. Remove from the pan immediately.
