Chocolate Chip-Banana Pancakes

Indulge in decadent banana-chocolate chip pancake perfection!
Ingredients:
  • 2 eggs
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 1/2 cups milk
  • 1 teaspoon vanilla
  • 1 large banana, chopped
  • 1/2 cup miniature semisweet chocolate chips
  • Maple syrup, if desired
Instructions:
  • Preheat griddle to 375°F or heat skillet over medium-high heat; grease with shortening if needed (or spray with cooking spray before heating).
  • In a large bowl, gently whisk eggs until lightly beaten. Add all ingredients except banana, chocolate chips, and syrup, whisking until smooth. Gently fold in banana and chocolate chips.
  • Pour slightly less than 1/2 cup of batter for each pancake onto a hot griddle. Cook until puffed and dry around the edges, then flip and cook until golden brown. Serve with syrup.
