Chocolate-Covered Peanut Butter Candies

Sweet, easy homemade candy with irresistible flavor fusion.
Ingredients:
  • 1/2 cup creamy peanut butter
  • 1/4 cup butter or margarine, softened
  • 1/4 cup chopped peanuts
  • 1/2 teaspoon vanilla
  • 2 cups powdered sugar
  • 1 bag (12 oz) semisweet chocolate chips (2 cups)
  • 1 tablespoon plus 1 teaspoon shortening
  • 1/2 cup powdered sugar
  • 2 tablespoons creamy peanut butter
  • About 1 tablespoon milk
Instructions:
  • Prepare the baking pan by lining it with foil, making sure to leave a 1-inch overhang on two opposite sides. Grease the foil generously with butter.
  • Combine 1/2 cup peanut butter, butter, peanuts, and vanilla in a medium bowl. Gradually mix in 2 cups powdered sugar until a stiff dough forms. Use your hands to work in the powdered sugar if needed. If the dough is crumbly, incorporate an extra 1 tablespoon of peanut butter. Press the mixture into a pan, cover, and refrigerate for about 1 hour until firm. Remove from the pan using the foil edges to lift and cut into 8 rows by 8 rows.
  • Prepare a cookie sheet with waxed paper. In a small saucepan, gently melt chocolate chips and shortening over low heat, stirring continuously. Dip each peanut butter square into the chocolate mixture, ensuring they are thoroughly coated. Transfer the squares onto the prepared waxed paper. Let them sit in the refrigerator uncovered for approximately 30 minutes until they are set.
  • Combine 1/2 cup of powdered sugar and 2 tablespoons of peanut butter in a small bowl. Use a wire whisk to beat in milk until smooth. Add more milk, if needed, 1 teaspoon at a time, until the mixture is thin enough to drizzle.
  • Cover the chocolate-covered squares with a luxurious drizzle of icing, then chill in the refrigerator for about 30 minutes until set. Keep the candies fresh by storing them loosely covered in the refrigerator.
