Chocolate-Dipped Shortbread Cookies

Make easy and economical shortbread cookies at home. Dip in chocolate for a special touch. Use cookie cutters for fun shapes, perfect for Christmas trays. Check out Betty’s Christmas cookie recipes for more inspiration.
Ingredients:
  • 1 cup butter or margarine, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 1 cup semisweet chocolate chips
  • 2 teaspoons shortening
Instructions:
  • Preheat the oven to 350°F. In a large bowl, use a spoon to cream together the butter, powdered sugar, and vanilla until smooth. Gently fold in the flour. Add 1 to 2 tablespoons of softened butter or margarine if the dough appears crumbly.
  • Roll out the dough to 1/2 inch thickness on a lightly floured surface. Cut into small shapes either by hand or using cookie cutters, then arrange them 1/2 inch apart on an ungreased cookie sheet.
  • Bake for 14 to 16 minutes until set and the bottoms are a light golden brown. Transfer cookies from the sheet to a wire rack right away. Allow them to cool completely, which will take around 30 minutes.
  • In a small microwave-safe bowl, melt the chocolate chips and shortening uncovered on High for 1 to 1 1/2 minutes until smooth. Dip half of each cooled cookie into the melted chocolate, place on waxed paper until set, and store in a covered container with waxed paper between layers.
