Indulge in rich chocolate-dipped shortbread cookies bursting with chocolate chips.
Ingredients:
  • 2 cups all-purpose flour
  • 1 cup butter, softened
  • 0.5 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1 (12 ounce) package miniature chocolate chips, divided
  • 1 tablespoon vegetable shortening
Instructions:
  • Heat your oven to 350°F (175°C).
  • Combine flour, butter, sugar, and vanilla extract in a bowl and mix until smooth dough forms. Set aside 1/4 of the chocolate chips. Stir the rest of the chocolate chips into the dough until evenly mixed. Shape the dough into 24 small logs and arrange on a baking sheet.
  • Bake in a preheated oven for 15 to 20 minutes until edges turn slightly golden. Let them cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
  • In a small saucepan over medium-low heat, melt the shortening. Stir in the chocolate chips and melt for about 5 minutes. Dip cookies in the chocolate and place them back on the baking sheet. Refrigerate until firm.
