Quick and simple mini chocolate chip muffins, perfect for sharing with the family in under an hour!
Ingredients:
  • cooking spray
  • 2 cups all-purpose flour
  • 0.5 cup white sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 egg
  • 1.25 cups milk
  • 0.33333334326744 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 0.75 cup mini chocolate chips
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and lightly grease 48 miniature muffin cups.
  • Combine flour, white sugar, brown sugar, baking powder, and salt in a large bowl.
  • In a separate bowl, gently whisk the egg, then combine with milk, vegetable oil, and vanilla extract. Add this egg mixture to the flour mixture and mix until combined. Gently fold in mini chocolate chips.
  • Portion the batter into the lined muffin cups, ensuring they are filled to three-quarters capacity.
  • Bake in the preheated oven for about 10 minutes, or until the tops spring back when lightly pressed. Let the muffins cool briefly in the tin before transferring them to a wire rack to cool completely.
