Transform pumpkin guts into delicious spiced muffins with mini chocolate chips.
Ingredients:
  • 1 tablespoon clarified butter (ghee)
  • 1.75 cups pumpkin guts
  • 1.5 cups brown sugar
  • 0.5 cup butter, cubed and at room temperature
  • 3 eggs
  • 4 cups all-purpose flour, divided
  • 2 tablespoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 2 cups miniature semisweet chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 12-cup muffin tin with flavorful ghee.
  • Remove the seeds from the pumpkin guts and blend them until smooth in a food processor or blender.
  • Combine brown sugar and butter in a bowl until smooth. Whisk in pumpkin puree and eggs until fully incorporated.
  • In a bowl, combine 3 cups flour, baking powder, cinnamon, nutmeg, and salt. Mix the flour mixture into the pumpkin mixture until absorbed. Gradually add the remaining 1 cup flour until the batter is moist yet thick enough to hold a spoon upright. Gently fold in the chocolate chips.
  • Spoon batter into each of the 12 muffin cups in equal amounts.
  • Bake in the preheated oven for 20-25 minutes, until a toothpick inserted into the center comes out clean.
