Chocolate-Mint Thumbprints

Indulgent mint chocolate cookies for a decadent dessert.
Ingredients:
  • 1 cup butter, softened
  • 1 cup powdered sugar
  • 1 1/2 teaspoons peppermint extract
  • 2 egg yolks
  • 16 drops green food color
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup dark chocolate chips
  • 3 tablespoons whipping cream
  • 3 tablespoons butter
  • 18 thin rectangular crème de menthe chocolate candies, unwrapped, cut in half diagonally
Instructions:
  • Preheat the oven to 350°F and cover cookie sheets with parchment paper.
  • In a large bowl, cream together 1 cup of butter and powdered sugar until light and fluffy using an electric mixer. Mix in peppermint extract, egg yolks, and food color until well combined. Gradually add in flour, baking powder, and salt on low speed until just incorporated.
  • Roll the dough into 1-inch balls and arrange them 2 inches apart on cookie sheets. Press a deep well into the center of each cookie using the end of a wooden spoon handle.
  • Bake for 10 to 12 minutes or until set. Use the end of a wooden spoon handle to reshape wells. Allow to cool for 2 minutes before transferring to cooling racks. Let cool completely for about 15 minutes.
  • Place chocolate chips, cream, and 3 tablespoons of butter in a medium microwavable bowl. Microwave on High for 1 minute, stirring frequently, until the chocolate is melted and the mixture is smooth. Fill each well with approximately 1 teaspoon of the chocolate mixture and garnish with a candy piece. Allow it to stand for about 1 hour until the chocolate is set.
