Moist and flavorful chocolate pumpkin cupcakes, no frosting needed.
Ingredients:
  • 2 cups white sugar
  • 1.75 cups all-purpose flour
  • 0.33333334326744 cup cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 cup pumpkin puree
  • 1 cup milk
  • 0.5 cup canola oil
  • 2 teaspoons vanilla extract
  • 0.33333334326744 cup boiling water
Instructions:
  • Preheat the oven to 350°F (175°C) while preparing two 12-cup muffin tins with paper liners.
  • In the bowl of an electric mixer, blend sugar, flour, cocoa powder, baking powder, baking soda, and salt until mixed. Incorporate pumpkin, milk, canola oil, and vanilla extract; mix on medium speed for 2 minutes. Add water and mix until blended.
  • Fill the prepared muffin cups almost to the brim with the batter using a spoon.
  • Bake the cupcakes in the preheated oven until a toothpick inserted into the center comes out clean, approximately 20 minutes. Allow them to cool in the trays for about 10 minutes before transferring to wire racks to cool completely.
