Chocolate Pumpkin Pudding Pie

Decadent no-bake custard pie, perfect in a variety of crusts.
Ingredients:
  • 0.5 cup white sugar
  • 0.5 cup light brown sugar
  • 2 tablespoons cornstarch
  • 1.5 teaspoons kosher salt
  • 0.75 teaspoon ground cinnamon
  • 0.75 teaspoon pumpkin pie spice
  • 1 pinch ground cloves
  • 1 (15 ounce) can solid pack pumpkin puree
  • 1 (12 fluid ounce) can evaporated milk
  • 4 egg yolks
  • 4 ounces bittersweet baking chocolate, finely minced
  • 2 teaspoons vanilla extract
  • 1 (9 inch) prepared chocolate cookie crumb crust
  • 2 tablespoons sweetened whipped cream
Instructions:
  • In a large saucepan, mix together sugar, light brown sugar, cornstarch, salt, cinnamon, pumpkin pie spice, and cloves. Add pumpkin, evaporated milk, and egg yolks, stirring until thoroughly combined.
  • In a saucepan over medium heat, bring the mixture to a boil, stirring constantly for 8 to 9 minutes. Remove from heat and add chocolate, butter, and vanilla extract. Stir until everything is melted and combined, which should take about 1 to 2 minutes. Pour the filling into the crust and refrigerate until firm for a minimum of 4 hours.
  • Top off with a dollop of fluffy whipped cream.
