Ingredients:
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter
  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons cocoa powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 2 cups chocolate milk
  • Chocolate chips, garnish
  • Chocolate syrup, garnish

Instructions:
  • Combine the pumpkin puree, egg, and melted butter in a medium bowl. In a smaller bowl, whisk together the flour, baking powder, baking soda, cocoa powder, and spices.
  • Incorporate the dry ingredients into the pumpkin mixture, then pour in the chocolate milk. Mix until just combined. The batter should be thick yet pourable. If it's too thick, gradually add more chocolate milk in 1/4 cup increments.
  • To make the perfect pancakes, pour 1/3 cup of batter onto a greased griddle over medium-low heat. Cook until bubbles form on the pancake and edges firm up, about 2-3 minutes. Flip and cook for another 2 minutes on the other side.
  • Optional step: Use a cookie cutter to create fun shapes with the pancakes.
