Chocolate pumpkin brownies

Decadent brownies infused with nutritious pumpkin.
Ingredients:
  • oil spray
  • 110g white self-raising flour
  • 110g plain flour
  • 25g cocoa powder
  • 110g brown sugar
  • 100g dark chocolate chips
  • 200 g boiled pumpkin, mashed
  • 120g 99% fat-free plain Greek yoghurt
  • 60ml skim milk
  • 1.50 gm icing sugar
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced) and lightly grease a 20cm square cake tin with oil, then line the base with baking paper.
  • In a large bowl, gently sift together the flours and cocoa. Mix in the brown sugar and chocolate bits until well combined.
  • Mix together the pumpkin, yogurt, and milk in a small bowl. Then, blend the pumpkin mixture into the flour mixture. Spread the batter into the prepared tin and ensure the top is smooth.
  • Bake for 15–20 minutes, or until a skewer inserted in the center comes out clean. Let it cool in the tin for 5 minutes before transferring it to a wire rack to cool completely. Cut into squares and dust with icing sugar before serving.
