Delicious chocolate-ricotta cheese muffins, perfect for any time of day!
Ingredients:
  • nonstick cooking spray with flour
  • 2.3333332538605 cups all-purpose flour
  • 0.75 cup semisweet chocolate chips
  • 2 teaspoons baking powder
  • 0.75 teaspoon salt
  • 1 cup ricotta cheese
  • 2 large eggs, lightly beaten
  • 1.3333333730698 cups milk
  • 1 teaspoon vanilla extract
  • 0.25 cup canola oil
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and coat 18 muffin tin cups with nonstick cooking spray that includes flour.
  • Combine the flour, sugar, chocolate chips, baking powder, and salt in a large bowl.
  • In a bowl, combine ricotta cheese with eggs one at a time, beating thoroughly after each addition. Whisk in milk and vanilla extract until fully incorporated.
  • Gently incorporate the cheese mixture and canola oil into the flour mixture until combined. Divide the batter evenly among the muffin cups.
  • Bake in the preheated oven for 22 to 25 minutes or until a toothpick inserted in the center comes out clean. Remove muffins from the pan and let them cool on a wire rack.
