Chopped cheese sandwiches with zesty mustard, tangy cherry peppers, and crispy fried onions, cooked to perfection on a sizzling cast iron skillet.
Ingredients:
  • 2 tablespoons stone ground mustard
  • 2 tablespoons ketchup
  • 4 pickled cherry peppers, stems removed
  • 1 tablespoon butter
  • 0.25 cup chopped onions
  • 12 ounces lean ground beef
  • salt and pepper to taste
  • 3 slices American cheese
  • 2 hoagie rolls, toasted
  • 1 cup shredded iceberg lettuce
  • 1 roma tomato, thinly sliced
Instructions:
  • In a food processor, blend together mustard, ketchup, and cherry peppers until smooth.
  • In a small skillet over medium-high heat, melt butter. Stir in onions and cook until soft and starting to caramelize, about 5 minutes. Take off the heat and set aside.
  • Shape beef into two juicy patties and generously season with the perfect amount of salt and pepper. In a sizzling hot cast iron skillet, sear the patties until a mouthwatering crust develops, roughly 5 minutes. Then, gently flip and cook for an additional 3 minutes.
  • With a wide spatula, gently separate the patties into large pieces. Scatter the sautéed onion in between the hamburger pieces. Top with cheese and cook for 2 minutes until melted.
  • Spread the tangy mustard sauce on the bottom bun of each hoagie roll. Divide the savory meat mixture evenly between the two sandwiches. Top them off with crispy shredded lettuce and juicy sliced tomato.
