Spicy Chopped Cheese Sandwich

Spicy New York-style chopped cheese made in a cast iron skillet.
Ingredients:
  • 1 tablespoon butter
  • 0.25 cup chopped onions
  • 12 ounces lean ground beef
  • 1 tablespoon Sriracha sauce
  • salt and freshly ground black pepper to taste
  • 3 slices American cheese
  • 2 hoagie buns, split and toasted
  • 1 cup shredded lettuce
  • 1 roma tomato, thinly sliced
Instructions:
  • In a small skillet over medium-high heat, melt butter. Sauté onions until tender and starting to caramelize, about 5 minutes. Set aside.
  • Mix ground beef and spicy Sriracha sauce in a large bowl until the sauce is evenly spread throughout. Shape the mixture into two thin patties and season with salt and pepper to taste.
  • Preheat a big cast iron skillet over medium-high heat. Place the hamburger patties in the skillet and sear for 5 minutes until a crispy crust develops. Flip and cook for an additional 3 minutes.
  • Using a wide spatula, gently break up the patties into large pieces. Sprinkle the cooked onion in between the hamburger pieces, then layer cheese on top. Cook for 2 minutes, or until the cheese is melted.
  • Evenly spread the hamburger and cheese mixture onto the toasted hoagie rolls. Finish by topping each with shredded lettuce and sliced tomato.
