Create a vibrant and spicy summer mango salad.
Ingredients:
  • 36.40 gm extra-virgin olive oil
  • 21.00 gm lime juice
  • 1 baby cos lettuce
  • 1 large mango, chopped
  • 1 Lebanese cucumber, quartered lengthways, chopped
  • 50g snow pea sprouts, trimmed, halved
  • 1 long red chilli, chopped
  • 62.50 ml fresh coriander leaves
Instructions:
  • Combine oil, lime juice, salt, and pepper in a screw-top jar. Secure the lid tightly and shake vigorously to blend the flavors.
  • Prepare the lettuce by removing the outer leaves and core, then separate the leaves. Wash and gently dry them with a tea towel before roughly chopping. Combine the lettuce with mango, cucumber, snow pea sprouts, chili, and coriander in a bowl. Add dressing and toss everything together. Serve and enjoy!
