Mango and chilli chutney

Tasty mango chutney adds a sweet & spicy kick to chicken.
Ingredients:
  • 1kg mangoes, peeled, chopped
  • 50g ginger, chopped
  • 2 long red chillies, seeds removed, chopped
  • 220g caster sugar
  • 250ml cider vinegar
Instructions:
  • Combine all the ingredients in a saucepan on low heat, stirring until the sugar dissolves. Cook, stirring occasionally, for 40 minutes or until a thick consistency forms. Transfer to a sterilized jar, seal, invert to create a sterile seal, and allow to cool.
