Pork with mango and chilli salsa

Mango and pork mingle sweetly with a spicy chili kick in this easy spring dish.
Ingredients:
  • 2 mangoes, peeled and stone removed, cut into 1cm cubes
  • 1 long red chilli, seeded and finely chopped
  • 1/2 small red onion, chopped
  • 21.00 gm lime juice
  • 62.50 ml chopped coriander
  • salt and cracked black pepper
  • 8 pork medallions, trimmed (see note)
  • salad leaves, to serve
Instructions:
  • Combine mango, chili, red onion, lime juice, coriander, salt, and pepper in a small bowl. Mix gently and refrigerate until needed.
  • Preheat a non-stick frying pan or stovetop grill over medium-high heat. Spray the pork with oil, then season with salt and pepper. Cook for 3 minutes on each side or until golden brown and cooked to your desired doneness.
  • Plate the pork evenly among individual plates and generously spoon mango salsa on top. Serve promptly alongside a light salad.
