Chorizo and haloumi fry-up

Spicy chorizo and salty haloumi sautéed to perfection, a quick side dish in 20 minutes.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 2 chorizo, sliced diagonally
  • 1 red onion, cut into wedges
  • 250g haloumi, sliced
  • 1 lemon, halved
Instructions:
  • In a large frying pan over medium-high heat, heat oil. Cook chorizo and onion, turning occasionally, until browned and chorizo is heated through, about 4 to 5 minutes. Transfer to a plate.
  • Place the haloumi in the pan and cook until golden on each side for 1 to 2 minutes. Add the chorizo mixture back to the pan and season with pepper. Mix everything together and transfer to a serving plate.
  • Place the cut-side of the lemon in the pan and let it cook for about 1 minute until it becomes charred. Serve the chorizo mixture alongside the grilled lemon.
