Flavorful chorizo and tomato stew paired with fluffy couscous for a satisfying meal.
Ingredients:
  • 20.00 ml Moroccan seasoning mix
  • 400g can tomatoes, chopped
  • 255.00 gm chicken stock
  • 250g Australian frozen broccoli florets
  • 375.00 ml couscous
  • 250.00 ml flat-leaf parsley
  • 2 chorizo sausages, sliced
  • 1 onion, chopped
Instructions:
  • In a large frying pan over medium heat, warm oil. Cook chorizo for 1-2 minutes on each side until golden. Transfer chorizo from the pan. In the same pan, sauté onion for 3-5 minutes until soft. Add seasoning mix and stir until fragrant.
  • Combine tomatoes, stock, and broccoli in a pot and bring to a boil. Sprinkle over cous cous, then reduce heat to low. Cover and simmer for 5 minutes until liquid is absorbed. Using a fork, stir in parsley and chorizo, fluffing up cous cous.
