Blistered green beans with tomato-chorizo jam

Green beans elevated with zesty chorizo and tomato jam.
Ingredients:
  • 125g chorizo
  • 400g cherry tomatoes, halved
  • 40.00 ml finely chopped fresh flat-leaf parsley
  • 1 small shallot, finely chopped (about 2 tbs)
  • 1 lemon, zest finely grated, juiced
  • 1 birdseye chilli, finely chopped (optional)
  • 2.50 gm smoked paprika
  • 1kg green beans, trimmed
Instructions:
  • Preheat the barbecue to medium-high heat.
  • Heat a medium heavy frying pan over medium-high heat. Add 1/4 cup (60ml) of oil and chorizo, stirring frequently, until chorizo is crisp (3-4 mins). Add tomatoes, cook until they break down (3 mins). Remove pan from heat, stir in parsley, shallot, lemon zest, 2 tbs lemon juice, chilli (if using), and paprika. Season with salt and pepper.
  • Cover the barbecue grates with an inverted wire rack to keep the beans from falling through. Toss the beans with the remaining 1 tablespoon of oil and season with salt and pepper. Spread the beans in batches on the rack, cook for 2-3 minutes, turning occasionally until they are lightly charred and tender-crisp. Transfer the beans to a large bowl.
  • Coat beans in flavorful tomato-chorizo mixture. Season with salt, pepper, and extra lemon juice to taste. Arrange on a serving dish and enjoy.
