Flavorful breakfast tacos with chorizo, potato hash, and eggs - a delicious meal anytime.
Ingredients:
  • 2 tablespoons vegetable oil
  • 2 baked potatoes, peeled and cubed
  • 0.5 cup chopped onion
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • salt and freshly ground black pepper
  • 7 ounces chorizo sausage, removed from casings
  • 5 eggs
  • 1 tablespoon milk
  • 3 tablespoons finely chopped fresh cilantro, divided
  • 6 small corn tortillas, warmed
  • 0.5 cup shredded Cheddar cheese
  • 6 tablespoons salsa
Instructions:
  • In a heated nonstick skillet over medium-high heat, add oil until it shimmers. Place potatoes, onion, garlic powder, and onion powder on one side of the skillet and season with salt and pepper. On the other side, add chorizo sausage and saute while breaking it up with a spoon until browned, around 5 minutes. Flip the potatoes halfway through to brown both sides evenly.
  • In a bowl, whisk together eggs, milk, 1 tablespoon of fresh cilantro, salt, and pepper. Pour the mixture into the skillet over low heat. Gently stir the eggs until they are just softly set, approximately 3 minutes. Remove from heat.
  • Lay out warm tortillas and evenly distribute the potato, chorizo, and egg mixture. Sprinkle with the remaining 2 tablespoons of cilantro, top with Cheddar cheese and salsa.
