Indulge in crispy chorizo queso potato bombs for a flavorful twist on a classic appetizer.
Ingredients:
  • 12 2-3 inch gold potatoes
  • 2 tsp. kosher salt
  • 1/2 lb. cooked, ground chorizo sausage
  • 1/2 cup prepared queso dip
  • 1 cup shredded monterey jack cheese
  • 2 eggs, beaten
  • 1 cup plain breadcrumbs
  • Cooking or Oil spray
Instructions:
  • In a medium saucepan, simmer potatoes with salt in water until just tender, about 8 to 10 minutes, making sure they are not overly soft. Once cooked, drain and set aside to cool.
  • Cut potatoes in half crosswise and carefully hollow out the flesh, leaving a 1/8-inch border. Mix sausage and queso in a medium bowl until smooth and creamy.
  • Fill one potato half with a generous teaspoon of chorizo mixture and the other half with 1 to 2 teaspoons of shredded cheese. Press the halves together firmly to ensure the potato starch binds them well. Dip each stuffed potato in egg, allowing any extra to drip off, then gently coat in breadcrumbs without letting the halves separate.
  • Preheat your airfryer to 400°F (200°C) and lightly coat the potatoes with oil or cooking spray.
  • Air fry until perfectly golden and irresistibly crispy, which should take around 8 to 10 minutes. Allow it to cool for 5 minutes before enjoying this delightful dish.
