Spicy chorizo queso dip with Mexican cheese, green chiles, and tortilla chips.
Ingredients:
  • 1 (10 ounce) package fresh chorizo (such as Hempler's)
  • 1 cup diced onion
  • 3 cloves minced garlic
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups milk, or more as needed
  • 1 (12 ounce) bag shredded Mexican cheese blend
  • 1 (4 ounce) can chopped green chilies
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Heat a large skillet over medium heat. Saute chorizo until browned and crumbly, about 5-7 minutes. Add onion and garlic; cook until transparent, about 4-5 minutes.
  • 1. In a saucepan over medium-high heat, melt butter until it sizzles. Add flour and whisk until a paste forms, about 5 minutes. Gradually whisk in milk and cook until sauce thickens, about 5 more minutes. Stir in the chorizo mixture, shredded cheese, and green chiles, stirring until smooth and thick.
  • Pour the mixture into a shallow baking dish.
  • Bake until golden brown in the preheated oven for approximately 25 minutes.
