Bold & delicious chorizo and potato dish, a must-try for breakfast lovers.
Ingredients:
  • 1.25 pounds Yukon gold potatoes, cut into 3/4-inch cubes
  • 0.75 pound fresh Mexican chorizo sausage, casing removed
  • vegetable oil, as needed
  • 1 small onion, diced
  • salt and ground black pepper to taste
Instructions:
  • In a large pot, cover potatoes with salted water and bring to a boil. Simmer on medium-low heat until slightly soft, about 5 to 6 minutes. Drain the potatoes.
  • Brown chorizo in a large skillet over medium-high heat, breaking up clumps, for 5 to 6 minutes. Transfer chorizo to a paper towel-lined plate with a slotted spoon, keeping 1 tablespoon grease in the skillet. Add more oil if needed to make 1 tablespoon.
  • In the same skillet, sauté the onions over medium heat until softened and slightly browned, about 4 to 5 minutes. Add the potatoes and cook until lightly browned, about 5 to 7 minutes. Mix in the chorizo and season with salt and pepper.
