Mexican breakfast favorite: Papas con chorizo in a tortilla topped with salsa or avocado for a quick morning meal.
Ingredients:
  • 1 (9 ounce) package Mexican chorizo sausage, casings removed
  • 1.5 tablespoons bacon drippings
  • 2 cups diced potatoes
  • 1 serrano pepper, chopped
  • 0.33333334326744 cup chopped onion
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon freshly ground black pepper, or to taste
Instructions:
  • Sear chorizo in a spacious skillet over medium-high heat, stirring often, until it deepens in color to a dark red, for about 6 to 8 minutes. Transfer chorizo out of the skillet and keep it aside.
  • In the same skillet, melt the bacon grease over medium to medium-high heat. Cook diced potatoes for 10 minutes, stirring occasionally. Add diced onion and serrano pepper and cook until potatoes are fork-tender, onion is translucent, and serrano pepper is soft, about 2 to 6 minutes. Reintroduce chorizo to the skillet, stirring until heated through. Season with salt and pepper.
