Delicious migas con chorizo for a customizable weekend brunch.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 cup coarsely broken tortilla chips
  • 0.5 medium onion, chopped
  • 0.5 medium green bell pepper, chopped
  • 0.75 cup chopped chorizo sausage
  • 1 medium tomato, diced
  • 5 large eggs, beaten
  • salt and ground black pepper to taste
  • 6 (6 inch) warm corn tortillas
  • 1 cup shredded Cheddar cheese
  • 0.25 cup salsa
Instructions:
  • In a skillet over medium-high heat, heat oil. Add crushed tortilla chips and cook while stirring for 2 to 3 minutes. Stir in onion and cook for an additional 3 minutes. Add bell pepper and cook until tender, about 3 to 5 minutes. Add sausage and cook until heated through, approximately 3 minutes.
  • Combine tomato with the mixture and mix well. Pour in beaten eggs, season with salt and pepper, and cook while stirring until eggs are fully set and cooked through, approximately 5 minutes.
  • Present the skillet mixture alongside tortillas, Cheddar cheese, and salsa to allow guests to customize their own delicious meal.
