Spicy scrambled eggs with Hatch chiles, onions, and crispy tortilla strips in a tasty breakfast taco.
Ingredients:
  • 1 tablespoon milk
  • salt and freshly ground black pepper to taste
  • 1 (4 ounce) can Hatch chile peppers
  • 0.25 cup onions, diced
  • 6 (6 inch) corn tortillas
  • 2 (6 inch) Tortillas, ready-to-bake or -fry, corn
Instructions:
  • In a bowl, combine cracked eggs with milk, salt, and pepper, and set aside.
  • In a skillet over medium heat, melt butter. Add Hatch chiles and onions and saute until onions are soft and translucent, about 4 to 5 minutes. Then add eggs, cook, and stir until eggs are set, about 3 to 4 minutes.
  • Evenly distribute eggs among 6 tortillas and sprinkle with crispy fried corn tortilla strips.
