Elevate your breakfast taco with creamy avocado, zesty red onion, and perfectly cooked eggs.
Ingredients:
  • 1/4 cup vegetable oil for frying
  • 3 corn tortillas, cut into pieces
  • 1 tablespoon olive oil
  • 1/2 red onion, chopped
  • 1 cup chopped tomato
  • 6 eggs
  • Salt and pepper, to taste
  • 1 or 2 canned whole green chiles, chopped
  • 1/2 cup finely shredded Mexican cheese blend (2 oz)
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count), warmed
  • 1 avocado, peeled, pitted and sliced, if desired
Instructions:
  • Heat vegetable oil in an 8-inch heavy skillet over high heat until hot. Fry tortilla pieces in the hot oil for 30 to 60 seconds until crisp and golden. Drain on paper towels.
  • Heat olive oil in a 10-inch skillet, then cook onion over medium heat for about 2 minutes until translucent, stirring occasionally.
  • Toss in ripe tomatoes and crunchy tortilla chips, then cook for 2 minutes.
  • Combine eggs, salt, pepper, and chiles, scramble until perfectly blended, then mix in cheese and allow it to melt.
  • Wrap the flavorful migas in warm flour tortillas and top with slices of creamy avocado.
