Delicious breakfast migas with homemade tortilla chips and salsa - a flavorful Mexican twist on classic breakfast eggs.
Ingredients:
  • 5 large eggs, beaten
  • 0.5 cup oil for frying
  • 12 (6 inch) corn tortillas, cut into bite-sized pieces
  • salt to taste
  • 3 dried guajillo chilies
  • 5 medium Roma tomatoes
  • 2 cloves garlic, peeled
  • 0.25 cup chopped onion
  • 3 cups hot water
  • 2 teaspoons salt, divided
  • 0.25 teaspoon dried Mexican oregano
  • 1 pinch ground black pepper
  • 1 tablespoon vegetable oil
  • 3 medium green onions, chopped
  • 0.25 cup fresh cilantro leaves
  • 1 ripe avocado, pitted and sliced
  • 2 tablespoons shredded Oaxaca cheese, or to taste
Instructions:
  • Heat skillet over medium heat and add enough oil to reach 1 inch depth. Once oil is hot, add cut tortilla pieces without overcrowding. Fry until crispy and golden, about 2 to 3 minutes. Remove with slotted spoon onto paper towel-covered plate to drain. Season with salt and fry remaining tortilla pieces in batches. Keep the frying oil for later.
  • Place a flat griddle or comal over medium-low heat and toast the guajillo chiles until fragrant, approximately 20 seconds per side.
  • In a saucepan, combine toasted chiles, tomatoes, and garlic. Cover with hot water and simmer over medium-low heat until guajillos are softened and tomatoes are fully cooked, around 10 minutes. Set aside 1/2 cup of cooking liquid.
  • Blend chiles, tomatoes, garlic, onion, 1 teaspoon salt, oregano, cumin, pepper, and reserved liquid in a blender until smooth. Strain the sauce.
  • In a saucepan over medium-high heat, warm 1 tablespoon of vegetable oil. Add the sauce and let it simmer until it thickens, which should take about 12 to 15 minutes. Taste and adjust seasoning to your liking.
  • In a skillet over medium heat, warm 1 tablespoon of the reserved frying oil. Once hot, add all tortilla chips and reheat for 1 minute. Then, pour in the eggs and stir until they start to set. Next, add salsa and gently fold it into the eggs until everything is coated and eggs are cooked, about 2 minutes.
  • Serve the dish piping hot and garnish with green onions, cilantro, avocado, and cheese.
