Easy Southwestern-style eggs, perfect with picante sauce on the side.
Ingredients:
  • 6 eggs
  • 0.25 cup milk
  • 3 (6 inch) corn tortillas, coarsely chopped
  • 1 tablespoon butter
  • 1 tablespoon chopped green onion
  • 0.5 cup diced cooked ham
  • salt and pepper to taste
Instructions:
  • Combine eggs and milk in a bowl, then soak tortilla pieces in the mixture for 5 to 10 minutes. Next, saute green onion and ham in butter in a skillet over medium heat until the onion is soft, about 5 minutes.
  • Cook the egg mixture in a skillet over medium/low heat until the eggs are fully cooked.
